MODULE 2

Microbiology & Foodborne Illness

Advanced microbiology of pathogens (Salmonella, Listeria, E. coli, Campylobacter). Outbreak investigation principles. High-risk groups (children, elderly, pregnant, immunocompromised).

MODULE 3

Contamination & Allergen Management

Advanced allergen control — the 14 named allergens, declaration requirements, cross-contact prevention, customer communication, recipe management.

MODULE 4

Personal Hygiene Supervision

Enforcing handwashing protocols, monitoring fitness to work, illness exclusion policies, jewelry/cosmetics enforcement. Coaching staff on behavior.

MODULE 5

Cleaning, Disinfection & Pest Control

Cleaning schedules and validation, disinfection chemicals (concentration and contact time), pest monitoring, contractor management for pest control.

MODULE 6

HACCP Supervision

The 7 HACCP principles in supervisory practice. Monitoring CCPs, verifying records, corrective actions, internal HACCP audits, HACCP team participation.

MODULE 7

Training Others

Adult learning principles, induction training delivery, on-the-job coaching, training records, verification of competence. Supervisors as trainers.

Food Safety Culture
