MODULE 2

Personal Hygiene

Handwashing technique and timing, protective clothing, reporting illness, jewelry and cosmetics rules, smoking and eating restrictions in food areas.

MODULE 3

Contamination Hazards

The four hazard categories — microbiological, chemical, physical, allergenic. How contamination happens. Cross-contamination prevention basics.

MODULE 4

Food Storage & Handling

Temperature control fundamentals (danger zone), basic food storage rules, FIFO stock rotation, separating raw and ready-to-eat foods.

Is Level 1 enough for food handlers in Dubai?
No. Dubai Municipality typically requires at least Level 2 Food Safety in Catering for active food handlers. Level 1 is for awareness only — cleaners, porters, delivery staff, security, students, new hires before progressing to Level 2. Active kitchen team members need Level 2.
What is the difference between Level 1 and Level 2?
Level 1 (half day, awareness) is for anyone in a food environment who is not handling food. Level 2 (1 day, food handler qualification) is for staff who actually handle, prepare, or serve food. Level 2 is the working baseline required by Dubai Municipality for food handlers.
How long is the Highfield Level 1 certificate valid?
